Notes from the curator

These honey process beans are very delicate, so we roast them carefully, slowly bringing up the heat so no scorching takes place. We roast this crop just barely past first crack, bringing out the sweet, sharp fruitiness that honey process coffees are famous for. Fantastic pour over coffee and a wildly complex espresso!
