This coffee hails from the Tarrazu region of Costa Rica, where high elevations create ideal conditions for strictly hard been (SHB) coffee. It attains a balance of sweetness that is held smooth by the drying consistency of drier drums (rather than sun-dried). The floral notes are prolific in this coffee with a touch of melon & orange manifesting in the finish. It's one of my favorite coffees to roast because it's like an old friend telling you a humorous story that makes you smirk. ~Tristan
