Ethiopia Sidamo 4 Natural is sourced from family owned farms within the Sidamo growing region of Ethiopia. Coffee producers deliver their ripe cherries to washing stations, where coffee is carefully sorted and immediately placed on raised beds and dried over a period of 15 to 20 days. The raised drying beds are carefully constructed to ensure proper air circulation and temperature control for an optimal drying process. Cherries are also turned regularly on the beds to prevent damage during the drying process. The cherries are stored in a local warehouse after the moisture is reduced to between 11.5 and 12 percent, and then milled and exported. Samples are then sent to the Ethiopia Commodity Exchange (ECX) where the coffee is made available through auction.


Sumatra Takengon Mandheling Grade 1 is sourced from the Jagong Mill and surrounding family-owned farms located in the Takengon and Atu Lintang coffee region of Aceh province on the island of Sumatra, Indonesia.  Irham Junus owns and operates the Jagong Mill with his son, Andi and daughter, Ina. The Junus family has focused on meticulous ripe cherry selection resulting in something truly unique in Sumatra.  The Junus family also has full control of the processing and milling right up to the final export stage, avoiding the long and convoluted supply lines that can compromise Sumatran quality.
