Notes from the curator

The highest scoring coffee that we offer, our Law Wu uses a black honey process to produce a unique and vibrant flavor profile with notes of Creme Brulee, Cherry and Floral. Black honey is similar to our normal honey process except the machinery is adjusted during the pulping process in order to leave more fruit mucilage on the bean. It is an extremely involved process that requires massaging the green beans multiple times a day for two weeks as well as taking detailed readings on moisture content in order to avoid fermentation. All this extra work was well worth it as our Law Wu Black Honey is our highest scoring coffee. The mucilage left on the coffee bean adds sweetness and acidity, and the attention to detail by our partners helps retain the elegance and nuance of the coffee. This coffee is great for all brew methods, but really shines with manual brew methods like a pour over.
